Selling sandwiches business. Sandwich recipes for a cafe or fast food menu. Competitive advantages of business

According to ACNielsen estimates, the prepared food production segment last year took second place in terms of growth (19%) in the Russian food market. In Moscow, premium sandwich producers are playing an increasingly prominent role in the segment and have launched a large-scale attack on the market position of ready-made salads. Market participants believe that in the near future their product has every chance of becoming the main dish for residents of metropolitan offices.

The First Lord of the Admiralty, John Montagu, Earl of Sandwich (1712–1792), is particularly memorable to posterity for two reasons. It was in his honor that James Cook named the Sandwich Islands, discovered in 1798. And it is he who is credited with inventing the dish now called the sandwich. The Count was a passionate card player and preferred to have a snack while playing. And in order not to get his hands dirty, he asked me to serve the beef chop between two pieces of bread. The islands, however, were later renamed Hawaiian, but the “closed sandwich” is still popular all over the world under the name of the inventor. This fruitful idea is actively used by shops, bars, and fast food restaurants.

As for the Moscow market, a real redistribution is now in full swing in the prepared food segment. Just a couple of years ago, residents of Moscow offices ate exclusively salads. “Not so long ago, if you remember, even every small store always had a counter with ready-made salads, and it all started with Korean-style carrots,” recalls Sergei Grigoriev, general director of the Aster-hip company. - Now we are trying to offer consumers higher quality, convenient, inexpensive and aesthetically pleasing food - sandwiches. “We estimate that in the next few years they are able to capture 10-15% of the food market aimed at office workers.”

The goal is quite achievable if we take into account the presence of the product in retail. Today, premium sandwiches (those packaged in a clear triangular plastic box rather than wrapped in cellophane) are sold in many stores, sandwich bars, gas stations, movie theaters, bowling alleys and other establishments. Moreover, manufacturers are tirelessly developing more and more new sales channels. It is quite difficult to estimate the true turnover of this segment due to the large number of players. There are only a few relatively large ones, with an extensive distribution system throughout the city. There are countless small companies that have staked out a certain territory or sell sandwiches through their own retail chain and individual catering establishments. But both of them are working to accustom Muscovites to civilized fast food.

“We have almost the same situation as in the USA,” says Galina Piskareva, director of Baltic Bread CJSC. - By and large, such sandwiches appeared there only a few years ago. Americans are more accustomed to purchasing hot fast food in eateries or on the street. Cold, or “European” (as they are called there), sandwiches are just beginning to conquer the market. Manufacturers and retailers promote them as an alternative to hamburgers and French fries. And the growth rate there is similar to ours: according to the consulting firm Technomic, sales of cold sandwiches in the United States are growing by 15% per year.

The growth of the “sandwich” segment in Moscow, if it is ahead of the prepared food market as a whole, is not by much: experts talk about an increase of approximately 20% per year. Nevertheless, many entrepreneurs consider this direction as quite attractive. Judge for yourself. Entering the market is not too difficult; the market itself is not yet saturated. The culture of office food, street food and street fast food in general in the metropolis is just emerging, which means there is still an opportunity to occupy its niche. Let's say the Aster-hip company began selling its products through small stores in the center of Moscow and hopes in a few years to noticeably displace shawarma, which is beloved by residents of the capital.

Eat up the shawarma market!

It has always been difficult for fast food chains to operate in Italy. The consumer here has many opportunities to have a snack, and among the dishes, the true king of “fast” food is considered to be “panini” - a national version of the sandwich, which is served in 75% of establishments. However, here too there is a successful chain sandwich concept - Panini Giusto. The company was founded in 1979 and offers premium sandwiches. Panini Giusto has made the face of the brand the quality and quantity of toppings, special breads fried separately, and the comfortable atmosphere of bistro-like cafes.

The best company among sandwich producers in Italy is Tartufo. Her “calling card” is Parma ham, cheese, tomatoes, arugula and truffle oil. The average price of a sandwich is 6 euros. Other prices range from 3.7 euros for a simple panini to 12 euros for a complex one. Paninis account for up to 60% of turnover, and the average amount left by a visitor is 10 euros.

Starting a ready-made sandwich business is not as difficult as it seems. “In fact, at the initial stage, the main difficulty was obtaining all kinds of permits,” recalls Sergei Grigoriev. - In order to open a workshop for the production of finished products, you need to collect about fifteen different permits and approvals. It took us seven months. It took half as much time to set up work and sales. If we talk about the recipe, then everything was quite simple. I won’t lie and say that we came up with something original. I collected my first sandwich recipes using the Internet in about an hour. We only got a chef who creates sandwiches after a year and a half of work.” The equipment necessary for the production of sandwiches, as Grigoriev assures, is simple. The basis consists of refrigerated chambers for storing food and finished products, as well as the necessary equipment for packaging sandwiches. Everything else is done virtually by hand. The capacity of the workshop, which serves ten people, is from one to one and a half thousand sandwiches per day. This is the volume that can actually be sold.

Many companies do not consider sandwich making as their core business. They are engaged in food production or catering, and sandwiches for them are simply an interesting and attractive direction. “The bread factory became the basis for our business,” says Galina Piskareva (“Baltic Bread”). - There were already technologies and about seventy types of various products - from traditional bread to cakes. We didn’t order special research, we didn’t have a marketing plan - just last year we launched a line for the production of ready-made sandwiches in convenient and beautiful packaging. It was already obvious that we needed to enter new markets, develop, and compete.”

Indeed, Russian companies have not yet come up with much on their own. Many recipes are borrowed from the West. For example, in Europe in any supermarket you can see on the counter up to forty different types of sandwiches from different manufacturers. All that remains is to choose the one you like and “build” your own - at least not worse. However, for now the lot of this market is only to modestly try to take a bite of shawarma and dubious sandwiches heated in the microwave.

Fast food in Moscow is a pitiful sight,” Alcon marketing manager Alexander Nosikov categorically states. - When foreign companies contact our company with a request to conduct research on the “on-the-foot” food market in the capital, we have to make disappointing conclusions. The problem is primarily in the final price of the product. A decent sandwich cannot cost less than 80–150 rubles. And it is very difficult to compete with chebureks and belyashi, sold at a price of 10 rubles. In my opinion, the main task is not so much to enter the market with a quality product, but to change the food culture.

For example, the same salads that had already become familiar appeared at a time when it was quite difficult to find a ready-to-eat product (without heating) in metropolitan stores. Western fast food culture is coming to the capital at a time when Muscovites already have a choice. “You can take a salad, order pizza, eat something ready-made and hot on the street,” says Alexey Belkanov, director of Sandwich Company LLC. - We, for example, do not believe that this state of affairs can be radically reversed. Despite the fact that sandwiches and sandwiches in our company account for about 30-40% of sales in total, in my opinion, this is the limit. We can only develop further by multiplying the points where we can sell our products.” According to Alexey, the structure of consumer demand for such products is quite clear. In Moscow, 70% of buyers are employees working in the city center or driving home by car and buying sandwiches at gas stations, 15–20% are students, and another 5–10% are random people. Therefore, the company’s entire strategy is structured precisely in such a way as to make its products the most attractive and accessible to office dwellers and happy car owners. For this reason, about a year ago the company acquired its own lunch delivery service to offices, which, in addition to sandwiches, brings soups and salads, as well as hot dishes, to customers.

To come true or not to come true?

France: traditionally, in English

Oddly enough, the French do not seek to introduce any national nuances into the concept of English sandwiches. But here their production and retail sales (in bakeries, dessert houses, service stations, large stores and groceries) is a fairly large industry. More than twenty large operators operate in this segment. French research companies estimated sandwich consumption in 2006 at 600 million pieces, and market turnover at 1.5 billion euros. In less than 10 years, the number of sandwiches sold has increased by 50%. According to the Gira-Sic Conseil, sales volumes will increase to 795 million units by 2008.

Based on materials from yarmarka.net

As Alexey Belkanov recalls, when the company began showing its products in stores five years ago, the owners of retail outlets only turned their noses up, claiming that no one would buy it. The specifics of the product leaves a certain imprint on the technology for selling finished products. The life of a sandwich is not as long as we would like - three to four days at most. This means that stores really need to be sure that the product is in demand.

The first in our distribution network were cinemas, arcades and gas stations,” recalls Belkanov. - In general, all those places where people need tasty food that can be eaten without ceremony and quite quickly.

Stores really turned their attention to sandwich manufacturers only when sales began to grow noticeably in the entire “ready-to-eat” product category.

Other companies that did not enter this market from scratch were quite easily able to offer a new type of product to their regular customers. Especially when you consider that a sandwich in proper packaging does not require special storage conditions. Despite the fact that some manufacturers offer retail outlets to install their own display windows, market participants view this as an extravagance rather than a necessity.

Sandwich producers who do not have their own sales outlets compete with cafes that make their own sandwiches. However, market participants assure that they do not create any special problems. “After all, we make food that you can take with you,” says Galina Piskareva. While cafes and snack bars assume that the client will spend some time in the establishment - and this does not fit well into the concept of “fast” food.

In addition, more and more different service enterprises need high-quality finished products. For example, this includes car services and car washes, airports, railway stations and other places where people are forced to spend some time waiting. If quality food is offered to customers here too, then most likely the demand will not be long in coming. “We are now considering the possibility of installing special sandwich machines that will accept cash. Such devices can be installed anywhere, except perhaps in dentistry,” laughs Sergei Grigoriev.

Sandwich producers, however, also have difficulties, the essence of which stems from the characteristics of the product itself. As with any perishable products, there is a risk that the goods will not be sold on time. This means that the manufacturer will suffer losses. The share of unsold goods sometimes, as manufacturers admit, reaches 15–20%. This has to be compensated for by an increase in price. The average retail price of a product is about 100 rubles, and the cost is only 40.

Besides, the main thing here is appearance. After all, in fact, very few consumers pay attention to what is written on the packaging - usually a couple of minutes after purchase it ends up in the trash. This means that the main attention should be paid to how the finished product looks in transparent packaging.

Let us note once again that in general this market is quite attractive. And, despite some difficulties present in any business, manufacturers are quite optimistic about their own situation and sincerely hope to change the tastes of Muscovites in a few years.

UK: soup sandwich

Today the concept is the largest fast food segment in the UK. A third of Britons traditionally eat sandwiches at least once a day. The rapid growth of the market and the tripling of sandwich prices since 1990 have led to an expanded range and improved quality of ingredients to meet the growing expectations of sophisticated consumers.

According to a TNS Sandwichtrak study commissioned by the British Sandwich Association, the most popular meat components among the British today are chicken (21%) and ham (13%). However, sandwich recipes continue to improve. Marks & Spencer, the UK's largest retailer, offers sandwiches with Indian, Chinese and Mexican fillings in its department store cafes. Non-traditional sandwiches are available with Italian and Middle Eastern breads, tarts, bagels and American rolls.

Sandwich sellers, who initially focused on breakfast and lunch, are now trying to link their sales to coffee, fresh juices and soups. One company is even trying to sell a “soup sandwich,” in which bread made using a special technology plays the role of a “container.”

The traditions of “Fast food” in our country are only gaining momentum. Economists report annual growth of this market segment by more than 20%. For example, in England, according to statistics, a third of Britons consume sandwiches at least once a day. The rapid growth of the sandwich market in England began in 1990 and today the range of sandwiches sold there is very diverse. Competition in the Russian sandwich production market is still at a low level, but this is only a matter of time. The profitability of sandwich production is estimated at 40-50%.

What are the advantages of sandwiches over other fast food:

  • Sandwiches are sold in packaged form, so they inspire greater customer confidence and do not stain your hands when consumed;
  • Sandwiches can be sold in a variety of ways, from sale at the place of preparation to sale through vending machines;
  • The price of a sandwich is lower than, for example, shawarma or a hamburger, which means the sandwich is available to a wider range of consumers.

Which tax system to choose for a sandwich production business

To carry out activities, it is enough to register an individual business, but in some cases it is more advisable to open a legal entity. Read about the advantages of one or another legal form here.

How to start a sandwich making business

To organize production you will need a room with an area of 100 m2. Renting such space involves monthly fixed costs of 50 thousand rubles or depending on the region (more expensive in the Moscow region). It is important to note that not every room will be suitable. Since this is the production of products, regulatory authorities in the form of SES impose special requirements on such enterprises. Thus, the ceiling height in the production workshop must be at least 3 meters, the walls must be whitewashed, there must be exhaust ventilation and a constant water supply.

Sandwich production technology

The graphical version of the sandwich production process chain looks like this:

Staff

As in any food production, it is necessary to create a large staff of qualified specialists. Depending on the scale of production, you will need to employ the following workers:

  • Technologist;
  • Baker;
  • Packer;
  • Cook;
  • Handyman;
  • Accountant;
  • Sales manager;
  • Driver;
  • Security guard.

The total wage fund for such a team will be at least 200 thousand rubles per month. Plus 30% of this fund must be transferred to social funds (PFR and Social Insurance Fund).

What equipment to choose for the production of sandwiches.

Let's look at the list of necessary equipment for making sandwiches.

1. Installation of a mini-bakery for baking bread. This equipment will not be needed if ready-made bread is purchased (by agreement with the bakery). However, the advantages of your own bakery will be that you will be able to control the entire production process and independently form the range and taste of products. The list of equipment for baking bread includes:

  • flour sifter;
  • water dispenser;
  • proofing chamber;
  • rotating cabinet;
  • trolleys, bread pans.

The cost of a set of equipment for a mini-bakery starts from 300 thousand rubles. If you purchase an automatic line, the costs can amount to more than 2 million rubles.

2. Equipment for cutting pieces of bread into square pieces 1-1.2 cm thick. The price of a bread slicer starts from 150 thousand rubles.

3. Work tables on which operators place the filling into sliced pieces of bread and form the finished sandwich. Next, the sandwich is cut into halves of a triangular shape and a sandwich is obtained. Meat, fish, sausages, mushrooms, cheeses, vegetables, etc. are used as filling.

4. Equipment for packaging ready-made sandwiches. This process can be carried out manually, which will significantly reduce the start-up investment, but will subsequently increase fixed labor costs, or you can purchase a thermoforming machine for packing sandwiches, but such lines cost from 1.5 million rubles. Therefore, the choice to automate this process or not depends on the size of investment in the business, planned production volume, etc.

5. Storage of finished products and other equipment. To store finished products, you need to purchase a refrigeration chamber. Other equipment that is necessary for production includes: knives, commercial scales, racks, vegetable cutters, washing baths, cutting boards, gastronorm containers, etc.

You should also purchase at least one vehicle to deliver products to sales points. Ideally, the purchase of several cars is required, since delivery of products to retail outlets must be carried out daily, because sandwiches are a perishable product. Delivery of ready-made sandwiches begins in the morning, and the maximum number of outlets per route is no more than 50.

How much money do you need to start a sandwich making business?

1. An option with a full range of equipment and automation of production processes, from baking bread to packaging sandwiches - investment from 5 million rubles. Such a workshop is capable of producing more than 5,000 units. products. This also includes creating our own fleet of vehicles to deliver sandwiches to sales points. Large investments require large production volumes and coverage of regional markets;

2. Option with your own mini-bakery - from 1 million rubles. It is assumed that the entire production cycle will be serviced by workers (manual labor), starting from baking bread, ending with packaging of products and delivery to points of sale. This option is designed for small production volumes - up to 500 sandwiches per day;

3. Option to purchase ready-made bread - 600 thousand rubles. This is the cheapest option to start a project. The production process will be entirely manual labor without automation. Bread baking will be carried out under an agreement with a third party.

How much can you earn

You can really make good money making sandwiches. The growth of the market for sales of this type of semi-finished products itself began back in the 90s. At that time, investments were large, but the profit itself was smaller due to a weak advertising campaign. Now, taking into account the establishment of production facilities, staff salaries, and rent of premises, you need to invest at least 600,000 rubles. The profitability of this business is estimated at 40-50%, that is, you can earn up to a million rubles.

Which OKVED code to indicate when registering a business?

When registering a business, you must indicate OKVED code 10.89.2 (“Production of perishable products, semi-finished products”).

And changing the base, for example, bread not white, but black, will generally double your menu.

Opening a sandwich shop is a feasible mission.

The pace and rhythm of modern life do not always allow a working person to devote enough time to his nutrition, especially during the working week.

Some people have a substantial lunch in a cafe or restaurant, others eat sandwiches they bring with them in the office. But some of the population of megacities sometimes simply do not have time for this: everyone is on the run and on the go.

And a habit of fast food and snacks develops. But there is an excellent alternative to them - sandwiches in specially equipped sandwiches. Some people see this option as an analogue of snack bars, but without alcohol and without salads. But no: it has its own assortment, which means its own atmosphere and its own target audience.

Sandwich making doesn't start with the bread!

Like any other type of business, you should start with a structure in which costs and estimated income are prescribed, the profitability of the enterprise is justified and calculated based on marketing research.

Once the business plan is ready, it’s time to start issuing permits and registering with the tax authorities and authorities supervising sanitary and fire safety conditions. To conduct this type of activity, it is quite enough to register an individual entrepreneurship.

Fight and search, find and hide

When all the formalities have been settled, you should especially carefully choose a place to set up such an unusual public catering establishment. Idea sandwich shop assumes that the products can not only be bought to take away, but also consumed right on the spot. Therefore, such an establishment should be located in crowded places: huge shopping centers, train stations, fairs, bazaars, close to cultural institutions: museums, exhibition halls and educational institutions. Sandwich shops will be in particular demand on developed tourist and excursion routes within the city.

How to turn a sandwich into a work of art

Once a location has been chosen, it’s time to take care of purchasing the necessary equipment. These should be refrigerators and display cases, cutting tables - separately for each type of product, a stove and microwave or oven, boards and knives. The set of necessary equipment will depend on the selected range.

The assortment is the most complex and most creative part of this project. Sandwiches should be different. They should please with their appearance. And they should be easy to put together. However, there are no contraindications against complicating the task - preparing sandwich cakes with different fillings and bases. In addition, you can work with different types sandwich oils. All in your hands.

Drinks must be served with sandwiches. These can be soft sparkling waters, tea, coffee and even cocktails.

The best sandwich is youth

In addition to the mandatory sanitary and medical documents, it would be a good idea to check the degree of creativity of the staff, as well as knowledge of technology. Let your employees not be experienced chefs, but only beginners. This is a good opportunity to give young talents to show their imagination and taste. In addition, young people in the kitchen are more familiar with the needs and tastes of the target audience, which is mainly young people.

Sandwich interior

The interior design should be simple, but, as in any respectable establishment, the unity of the kitchen, dishes and interior should be maintained. By the way, the simplicity of the interior can play into your hands: if you plan to spend days and weeks dedicated to the sandwich traditions of different nations, then you can easily transform the interior by selecting the appropriate decor in the form of folk art objects or photographs that correspond to the idea.

To put sausage on your tongue pleasantly, you need the right sausage

As in any other similar project, the choice of suppliers plays a major role in the success, and, consequently, the profitability of the establishment. The range of purchased products can be quite large and include fish and meat prepared products, fresh vegetables, which are worth buying at the market. Dairy products such as sour cream and butter must be of high quality, and therefore should only be purchased from trusted suppliers. Even if your sandwich shop is quite small, it will be interesting and profitable to negotiate the supply of bakery products from a private bakery. This way you will add a special touch to your products.

A win-win

Since sandwich shops fit well into public places, it will be enough to get by with a sign and a pillar. You can announce the additional services provided by your establishment by releasing flyers or booklets where your products will be colorfully presented. The secret to the popularity of sandwiches

Sandwiches are the most popular among packaged ready-made sandwiches for vending and catering establishments. This snack consists of several slices of buns or pan bread and a filling located between them. Closed sandwiches are often used for quick snacks. They are common in various catering establishments, and are also successfully sold through vending machines in office buildings, educational institutions, business centers, train stations, factories, construction sites and other places where there is often a need to refresh yourself on the go.

The popularity of sandwiches in Moscow and other cities is due to their qualities such as:

  • convenient form for a snack in any conditions - at work, on the road, etc.;
  • tender crumb, thin crust, rich selection of toppings;
  • rich, original taste;
  • the ability to effectively satisfy hunger and replenish strength;
  • Possibility of saving lunch time.

Supplying sandwiches to cafes, fast food establishments, buffets and other public catering establishments allows you to generate additional income, since such products are in high demand among visitors. Installing vending machines allows you to save employee time, provide a good alternative to a canteen or buffet, and make a significant profit.

The history of the sandwich

Today, sandwiches for cafes and other fast food establishments are a familiar and sought-after menu item. How did this original closed sandwich come about? Its creator was John Montagu, a London minister and representative of the British Parliament, the 4th Earl of Sandwich. In 1762, he invented a sandwich with 2 slices of bread, between which was placed a thin piece of fried meat and a slice of cheese.

According to a well-known legend, the Earl was a passionate gambler and spent a long time at the London gaming tables. One day, when the game was very long, he was pretty hungry, but did not want to be distracted by the traditional meal using a knife and fork. Then the count asked the cook to prepare an appetizer for him from a couple of slices of toasted bread, a piece of roast beef placed between them and a slice of cheese. As a result, he was able to hold cards in one hand and the dish prepared for him in the other. His friends approved of this unusual way of replenishing strength and also ordered sandwich bread for themselves.

According to another version, John Montague was not a gambler and considered this activity a waste of time, and he did not have money for such entertainment. He created the sandwich with the goal of quickly and cheaply satisfying hunger while working on his projects for long hours. By the way, it was John Montagu who led the preparations for the famous expedition of James Cook, during which the Sandwich Islands (known to us as the Hawaiian Islands) were discovered. Be that as it may, since its creation, the sandwich has become a popular and sought-after dish in various parts of the world.
